Madrid Fusión Alimentos de España is an international gastronomy congress held every year in Madrid since 2003, organised by Foro de Debate SL in partnership with IFEMA Madrid. The 2027 edition is the 25th, running 1 to 3 February at IFEMA Madrid, Pavilions 12 and 14, for chefs, producers, sommeliers, pastry professionals, hospitality buyers, press and a paying public, all on the same ticket.
Madrid Fusión 2027 runs Monday and Tuesday from 9:00 to 20:00, and Wednesday, the closing day, from 9:00 to 18:00, at IFEMA Madrid. One ticket covers the Main Auditorium, the 360º HUB, Madrid Fusión THE WINE EDITION (Wines from Spain), Madrid Fusión Pastry, Madrid Fusión Dreams #SpainFoodTechNation, the Multipurpose Stage and the exhibition zone, where 224 companies showed products in 2026.
The 2026 edition closed with competitions across the stages, including a Best Escabeche award and a steak tartare championship, and drew more than 300 speakers and over 1,000 accredited journalists from 61 countries, per the organiser's own figures. Minors are admitted only with an adult.
A 3-day in-person pass for Madrid Fusión 2027, 1 to 3 February, costs 250 EUR and covers every stage, the exhibition zone, and online live and on-demand access, per the organiser's own ticket page. An online-only pass, with live streaming and replay of every stage, costs 50 EUR. The booking form also offers single-day in-person entry; check its price in the form before you buy.
Entry is subject to capacity at the time, per the organiser. Prices as of 27 October 2026.
Every Studio and Apartment at Truliving Vallecas by Habyt has its own fully equipped kitchen, useful for a persona that spends three days tasting other people's cooking: bring back a product from the exhibition zone and actually cook with it, instead of relying on stand food and congress catering from Monday to Wednesday.
Madrid Fusión 2027 opens Monday 1 February at 9:00; arrive the evening before to start the congress rested. Early February in Madrid runs cool and mostly dry (see Weather below), so pack a warm layer for mornings and evenings. Tickets are on sale now; see Tickets above.
Monday and Tuesday run 9:00 to 20:00, long days moving between the exhibition zone and the stages at IFEMA Madrid. Write up your tasting notes over a meal you cook yourself, then use the pool or the rooftop terrace at Truliving Vallecas by Habyt to reset before the next morning.
Wednesday closes earlier, at 18:00: plan your last visits to the exhibition zone before then if you are flying out the same evening, or extend your stay a night and unwind at the gastrobar instead of packing in a rush.
Truliving Vallecas by Habyt is a 10-minute walk from Valdecarros, the southern terminus of Madrid Metro Line 1. IFEMA Madrid's own station, Feria de Madrid, is on Line 8. Line 1 does not meet Line 8, so the trip needs two changes: take Line 1 from Valdecarros to Pacífico (12 stops), change to Line 6 and ride via Avenida de América to Nuevos Ministerios (8 stops), then change to Line 8 for Feria de Madrid (4 stops). Allow about an hour door to door, and check a live planner before you travel. A taxi skips the changes; taxi ranks and a 3 EUR entry supplement apply at the venue, per IFEMA's own access guide.
IFEMA Madrid has parking at its South, North and East entrances; which car parks open for Madrid Fusión 2027 is not yet published. Reach the venue by car via the M11 (exits 5 and 7), M40 (exits 5, 6 and 7) or A2 (exit 7). Truliving Vallecas by Habyt offers its own parking for 70 EUR a month, for a longer stay.
Historical average for 1 to 3 February (2016 to 2025): 13.1°C high, 3.0°C low, rain on 4 of 30 days checked (Open-Meteo historical data). Most years in the sample stayed dry across all three days: pack a warm layer, not a heavy coat.
A fully equipped kitchen in every room means three congress days do not have to run on stand food alone. The pool, the rooftop terrace and the 24-hour gym give you a way to reset after long days on your feet in the pavilions, and the gastrobar and cinema room suit an easy evening without planning. Choose the Studio for a solo stay or the 2-Bedroom Apartment, with two bedrooms for up to four guests, if you travel with colleagues. See the property page and Habyt's Madrid business stays.
It is across town, so plan the trip or take a taxi. The metro trip needs two changes: Line 1 to Pacífico, Line 6 to Nuevos Ministerios, then Line 8 to Feria de Madrid. Allow about an hour door to door, and check a live planner before you travel. What you get in return is a full kitchen, space and value.
